French eatery Bistron Citron has closed its doors along Old Northern Boulevard in the Village of Roslyn in favor of a renovation that will see it reopen as Salumeria Pomodoro, an Italian restaurant, in the coming weeks.
Citron had been open since 2003.
It is owned by the Huntington Station-based Reststar Inc., which owns several other restaurants across Long Island including La P’tite Framboise in Port Washington.
Jason Machado, one of Reststar’s partners, told Newsday that “Citron had run its course. It wasn’t able to keep up with the changing atmosphere in Roslyn and we thought an Italian restaurant would be in a better position to compete.”
Efforts to reach Machado or Reststar officials were unavailing.
Renovations to the restaurant space, located at 1362 Old Northern Blvd., have begun, and a sign on the front door suggests Salumeria Pomodoro may be opening in the next few weeks.
Machado said the new Italian eatery will specialize in house-cured sausage and imported prosciutto and cheeses, as well as homemade pasta.
The same Newsday report says Salumeria Pomodoro’s head chef will be John Kaunas, who has worked in Manhattan and Chicago.
